What's different
The n after the vowel matters. Most American voices stretch the æ in fan into a glide before it, so fan sounds longer and has two parts, roughly "fe-an". Fun keeps one short "uh" that runs straight into the n.
In British voices, fan is a plain, open a with no glide, so compare length and brightness there instead.

æ (hat) is wide and bright. ʌ (hut) is short and relaxed.
